Bitterness is a sign of quality, not a defect

Many people mistake the bitter, peppery kick at the back of the throat for high acidity or poor quality. In fact, it is the exact opposite. That pepperiness is the physical sensation of polyphenols — the powerful antioxidants that make high-quality extra virgin olive oil so healthy.

Color tells you nothing about quality

Professional olive oil tasters use blue-tinted glasses specifically so they cannot see the color of the oil. A bright green oil is not necessarily better than a golden yellow one; color is simply a reflection of the olive varietal and the exact timing of the harvest.

The enemy of olive oil is time, light, and heat

Unlike wine, olive oil does not improve with age. It begins degrading the moment it is pressed. The finest oils are stored in temperature-controlled stainless steel tanks under nitrogen or argon gas to prevent oxidation, and are only bottled in dark glass just before shipping.

Early harvest yields less oil, but better oil

Producers who prioritize quality over quantity harvest their olives early, when they are still green. This yields significantly less oil per kilo of olives, but the resulting oil has much higher polyphenol levels, a longer shelf life, and a more vibrant, complex flavor profile.

The term 'Cold Pressed' is largely obsolete

Modern high-quality olive oil is rarely 'pressed' with traditional stone wheels and mats, which expose the paste to oxygen and degrade the oil. Today, the best oils are extracted using state-of-the-art continuous cycle centrifuges that operate at strictly controlled low temperatures.

Supermarket extra virgin is often a blend of years and countries

Much of the oil sold commercially as 'Extra Virgin' is a blend of oils from different countries, sometimes including oil from previous harvests. A true estate oil is the product of a single harvest, from a single property, expressing the specific terroir of that year.

The groves awaken. The trees begin to blossom in late spring. A beautiful time to visit the estates, walk the groves, and taste the oil from the previous autumn's harvest, which has now settled and balanced.

Summer (Jun–Aug)

The olives are growing and developing. The estates are warm and vibrant. An ideal season for evening tastings on the terrace and incorporating the oil into the fresh, raw dishes of the Mediterranean summer.

Harvest (Oct–Nov)

The pinnacle of the olive oil year. The harvest begins in October for the highest quality early-harvest oils. This is the only time to taste olio nuovo — the electric, unfiltered new oil straight from the centrifuge.

Winter (Dec–Feb)

The harvest concludes in the colder regions. The new oil is resting in the tanks. A quiet, reflective time to visit the estates and engage in serious, focused tasting masterclasses without the rush of the harvest.
